We’re getting into the warm months and a smoothie is a great way to cool down.  You can really get creative with smoothies using fruit, herbs, juices or alcohol.  And don’t forget the ice!

I developed this smoothie recipe for my restaurant, Robert Irvine’s nosh.  It’s healthy, delicious and icy!

Grilled Watermelon Basil Mint Smoothie (yields 6 -10 oz smoothies)

Ingredients

1 -watermelon seedless plank- 2 inch thick X 10 long x 6 wide

2 tbsp- granulated sugar

1/4 tsp.- kosher salt

1 cup- unsweetened apple juice

12-mint leaves

6 – basil leaves

1/4 cup- honey

1/4 tsp- vanilla pulp

1 qt- low fat yogurt

1 cup- ice

 

Method

To grill watermelon, sprinkle with salt and sugar then over high heat grill, 400 degrees, quickly cook each side for 2 minutes, flipping with wide spatula.

Once watermelon is cooked remove from grill, and add all ingredients except basil and mint to blender and puree until smooth, 1-2 minutes.

Finally, add basil and mint, pulse 5-6 times then serve. Garnish with watermelon wedge and mint julienne.
