We’re getting into the warm months and a smoothie is a great way to cool down. You can really get creative with smoothies using fruit, herbs, juices or alcohol. And don’t forget the ice!

This recipe was made famous at Robert Irvine’s nosh. It’s healthy, delicious and, best yet, icy!
Grilled Watermelon Basil Mint Smoothie
(yields 6 -10 oz smoothies)
Ingredients
- 1 -watermelon seedless plank- 2 inch thick X 10 long x 6 wide
- 2 tbsp- granulated sugar
- 1/4 tsp.- kosher salt
- 1 cup- unsweetened apple juice
- 12-mint leaves
- 6 – basil leaves
- 1/4 cup- honey
- 1/4 tsp- vanilla pulp
- 1 qt- low fat yogurt
- 1 cup- ice
- 1 cup vodka (optional)
Directions
To grill watermelon, sprinkle with salt and sugar then over high heat grill, 400 degrees, quickly cook each side for 2 minutes, flipping with wide spatula.
Once watermelon is cooked remove from grill, and add all ingredients except basil and mint to blender and puree until smooth, 1-2 minutes.
Finally, add basil and mint, pulse 5-6 times then serve. Garnish with watermelon wedge and mint julienne.
